Panga fillets baked

Atún con salsa de tomate a las hierbas

Ingredients

  • 4panga fillets
  • 2 egg yolks
  • 1 tablespoon flour
  • 3 lemons
  • Butter
  • White wine
  • Parsley
  • Salt

Preparation

First introduce the panga fillets in a dish (buttered) that is suitable for the oven. Add the salt and cover with white wine.

Then cover the dish with greaseproof paper to prevent browning in the oven. And introduce it into the oven preheated 170 º C, for 20 minutes. Take it out and let it repose.

The next step will be to prepare a lemon sauce with white wine.

Filter the white wine you cook before the panga fillets and put it in a casserole. Add the flour, the egg yolks and lemon juice. Using a mix Cook we remove very well and we put it to cook prevent sticking, for about 10 minutes.

At the end we took and serve over the panga fillets.
